Slow-cooker baked apples

Servings: 4

Ingredients

4 red apples
80g (1/2 cup, lightly packed) brown sugar
45g unsalted butter, at room temperature
2 tablespoons pecan nuts, finely chopped
2 tablespoons raisins
3/4 teaspoon ground ginger
80ml (1/3 cup) water
Pouring cream, to serve

Directions

  1. Use an apple corer to core apples, leaving base intact. Use a teaspoon to scoop out the flesh to create a slightly wider cavity. Use a paring knife to score the skin around the circumference of the apples. 
  2. Combine the sugar, butter, pecan, raisins and ginger in a bowl. Divide among the apple cavities, pushing down well. 
  3. Place apples in a slow cooker, making sure the apples don’t touch the side. Pour water around the apples. Cook on high for 2 hours 15 minutes to 2 hours 30 minutes or until apples are tender. Divide among bowls. Serve with the cream.
