Ingredients
1 carton (32 oz.) low-sodium chicken broth • 1 can (14 1/2 oz.) diced tomatoes
2 cups cubed cooked chicken
1 large tart green apple, peeled and chopped
1/4 cup finely chopped onion
1/4 cup chopped carrot
1/4 cup chopped green pepper
1 tbsp. minced fresh parsley
2 tsp. lemon juice
1 tsp. salt
1 tsp. curry powder
1/2 tsp. sugar
1/4 tsp. pepper
2 whole cloves
Directions
- In a 3- or 4-qt. slow cooker, combine all ingredients.
- Cover and cook on low for 6 to 8 hours or until vegetables are tender.
- Discard cloves and serve.
